In the last quarter-final, the best chefs from the heats cook against each other.
First up is the invention test, the cooks are tasked with creating one dish with either herbs, citrus or spices as the heart of the plate in just 70 minutes. After tasting, two of the professionals will leave.
The remaining four chefs now have an hour and 15 minutes to produce an exceptional two-course menu for three of the country’s most notable restaurant critics – Jay Rayner, Grace Dent and Amol Rajan – after which one more chef will be sent home.
